Million Dollar Cabbage with Pork Chops

This recipe can easily be adjusted to feed a larger crowd. With all of our kids grown and gone, it's now just my husband and I. I fix 4 pork chops and use half a head of cabbage but you could fix 6 to 8 pork chops and use the entire cabbage head, adding a slice of bacon for each pork chop cooked.

The sauteed cabbage mixture can also easily be used as a side dish to numerous other meats, such as fried chicken, meat loaf or chicken-fried steak. It's also a hearty stand-alone meal if all you want is some flavorful country goodness without having to cook additional meats!

Ingredients

  • PORK CHOPS

  • 4
    pork chops
  • 1 c
    kountry kernel seasoned flour
  • 1/2 c
    panko bread crumbs, plain
  • 1
    egg
  • ·
    salt and pepper to taste
  • 3 Tbsp
    vegetable oil (add more if making larger batch)
  • SAUTEED CABBAGE

  • 1/2
    cabbage head, chopped into large pieces
  • 1/2
    sweet onion, sliced or diced
  • 1/2
    apple, sliced or chopped (i use honeycrisp but any cooking variety works)
  • 4 slice
    bacon, chopped into approximate 1-inch pieces
  • ·
    salt and pepper to taste
  • 1 dash(es)
    cayenne pepper -or- chili flakes, optional
  • 1/4 c
    raisins or golden currents, optional

How to Make Million Dollar Cabbage with Pork Chops

Step-by-Step

  1. Create a seasoning station: small to medium size bowl with whisked egg; plate with Kountry Kernel Seasoned Flour and Panko bread crumbs, mixed; empty plate to set seasoned pork chops while awaiting cooking.
  2. Lightly salt and pepper the pork chops. You don't need much since you're using a seasoned flour. Dip into egg, then into the flour and bread crumbs mixture. Set aside on plate in preparation to brown in fry pan.
  3. In a large skillet (I use cast iron), lightly fry bacon pieces so grease renders over medium heat. Do not crisp. Set aside the bacon. Add vegetable oil to the bacon drippings and turn-up heat to medium-high.
  4. Brown the pork chops on each side, about one-minute each side. Put pork chops on a baking sheet and bake in oven at 350-degrees for about 12 to 16 minutes. Do not overcook or they will be dry.
  5. While pork chops are baking, return bacon to the fry pan. Saute bacon for one to two minutes til slightly crisp. ADD cabbage and stir. ADD apples and onions to the pan, as well as optional raisins or golden currents. Lightly add salt and pepper to taste. (NOTE: For extra 'heat', ADD ground cayenne pepper or chili flakes to taste, starting with small pinch). Stir from the bottom to incorporate the seasoned drippings left from browning pork chops. Cook until tender. Takes about 5 to 10 minutes, according to your personal desired level of tenderness. (My family likes their cabbage slightly crispy similar to stir-fry, which takes about 5 or 6 minutes over medium-high heat on my stove in cast iron skillet).
  6. Pork chops and cabbage, onion, apple, bacon mixture should be ready at about the same time. Pile cabbage mixture into a serving dish, top with pork chops and serve hot.
