mama's black beans

Awesome and easy! Made this one up about 2 years ago, found out I had diabetes and slightly high cholesterol so I decided to experiment! This can also be served as a side dish, really goes well with fish!

Ingredients
- 1 tablespoon olive oil, light
- 1 medium onion, finely chopped
- 1 teaspoon italian seasoning
- 1 tablespoon parsley flakes
- 1 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 1 teaspoon jalapeno sauce or red hot sauce
- 4 tablespoons capers
- 1 tablespoon adobo seasoning (find in hispanic aisle)
- 1 can black beans
- 1 can tomatoes, canned italian-style and diced
- 1 can salsa verde
- - water, as needed
- 4 cups cooked brown rice
How To Make mama's black beans

Step 1saute onion w/olive oil in large saucepan on med. heat while adding all spices 'til transparent (everything except canned items)

Step 2add beans, tomatoes,and salsa

Step 3fill bean can about halfway with water and stir to get all the good stuff out, add to pot

Step 4heat through stirring occaisionally

Step 5serve over cooked brown rice
