Ingredients

  • 3 cups fresh kale, chopped
  • 3 - carrots, cubed
  • 5 - baby eggplant
  • 1/2 - onion chopped
  • 2 cloves garlic
  • 1 - zucchini chopped
  • 1 - lime
  • 1/2 cup water
  • 1 teaspoon salt and pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil, extra virgin
  • 1/4 cup almonds, chopped (optional)
  • 1 pinch red pepper flakes ( optional)

    Step 1
    Spray a cast iron skillet and heat on medium heat. Add onion, cook for 1 minute. Add zucchini, eggplant,carrots, garlic, cook for 5 minutes. add kale and olive oil cook for 5 minutes, add water for continue to cook until the vegetables still have a bite 6-7 minutes more. Turn the heat off add the juice of the lime, salt, pepper, garlic powder, almonds and Just a pinch of red pepper flakes
