Ingredients
- 3 cups fresh kale, chopped
- 3 - carrots, cubed
- 5 - baby eggplant
- 1/2 - onion chopped
- 2 cloves garlic
- 1 - zucchini chopped
- 1 - lime
- 1/2 cup water
- 1 teaspoon salt and pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil, extra virgin
- 1/4 cup almonds, chopped (optional)
- 1 pinch red pepper flakes ( optional)

Step 1Spray a cast iron skillet and heat on medium heat. Add onion, cook for 1 minute. Add zucchini, eggplant,carrots, garlic, cook for 5 minutes. add kale and olive oil cook for 5 minutes, add water for continue to cook until the vegetables still have a bite 6-7 minutes more. Turn the heat off add the juice of the lime, salt, pepper, garlic powder, almonds and Just a pinch of red pepper flakes
