    fresh kale, chopped

    carrots, cubed
  • 5
    baby eggplant
  • 1/2
    onion chopped
  • 2 clove

    zucchini chopped
  • 1
  • 1/2 c
  • 1 tsp
    salt and pepper
  • 1 tsp
    garlic powder
  • 1 Tbsp
    olive oil, extra virgin
  • 1/4 c
    almonds, chopped (optional)
  • 1 pinch
    red pepper flakes ( optional)

How to Make Kale the supervegetable


  1. Spray a cast iron skillet and heat on medium heat. Add onion, cook for 1 minute. Add zucchini, eggplant,carrots, garlic, cook for 5 minutes. add kale and olive oil cook for 5 minutes, add water for continue to cook until the vegetables still have a bite 6-7 minutes more. Turn the heat off add the juice of the lime, salt, pepper, garlic powder, almonds and Just a pinch of red pepper flakes
