  • 1 pound pork fat
  • 4 teaspoons paprika
  • 1 tablespoon kosher salt
  • 1 teaspoon red pepper flakes
  • 2 teaspoons black pepper
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon cumin
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon tyme
  • 1 teaspoon sugar

How To Make italian sausage

  • Step 1
    cut up pork and grind pork & fat in a grinder with a large hole grate.
  • Step 2
    add all spices in a bowl and mix Add to ground meat mix
  • Step 3
    put in freezer for an hr. to stiffen meat
  • Step 4
    we re grind an stuff in into casings with a 5/16 grate at the same time
