  • 5 lb
    pork shoulder butt
  • 1 lb
    pork fat
  • 4 tsp
    paprika
  • 1 Tbsp
    kosher salt
  • 1 tsp
    red pepper flakes
  • 2 tsp
    black pepper
  • 1 tsp
    granulated garlic
  • 1/2 tsp
    ground sage
  • 1/2 tsp
    cumin
  • 1/2 tsp
    ground mustard
  • 1/4 tsp
    tyme
  • 1 tsp
    sugar

How To Make italian sausage

    cut up pork and grind pork & fat in a grinder with a large hole grate.

    add all spices in a bowl and mix Add to ground meat mix

    put in freezer for an hr. to stiffen meat
  • 4
    we re grind an stuff in into casings with a 5/16 grate at the same time
