Indonesian - Dried Chili and Egg Stew

A light stew consisting of fried egg and some spicy red chili stir fried makes the perfect meal when you need something hot and peppery on a cold day!

Ingredients
-
·3 tbsp oil
-
·5 hard boiled eggs, peeled

·1 clove garlic, finely chopped
-
·1/2 onion, finely chopped
-
·1 tbsp dried shrimps, finely ground
-
·2 pieces kaffir lime leaves
-
·1 tbsp peanut butter, crunchy
-
·3 tbsp abc sweet sauce sauce (kecap manis)
-
·80ml water
-
·1/2 tsp salt
-
·1/4 tsp pepper
-
·2 or 3 dried chilies
-
·1 sprigs spring onions, sliced diagonally
How to Make Indonesian - Dried Chili and Egg Stew
- Carefully shallow fry the hard boiled eggs in heated oil until golden brown.
Remove and set aside. - Use the remaining oil in the pan to saute garlic, onion and grounded dried shrimps until they are fragrant.
- Add peanut butter and water.
Bring to boil. - Add fried egg, Sweet Soy Sauce, salt and pepper to taste. Stir to combine. Cook on low heat until the sauce thickens.
- Add dried chili and spring onions and stir through.
Remove from heat and serve. - Your Dried chili and Egg stew is ready to eat!
