You can make this vegetarian by leaving out the chicken and it is still full of flavor. This is a delicious spicy soup that is very healthy!

Ingredients For haitian hot soup

  • 1 Tbsp
    olive oil
  • 1 sm
    yellow onion, diced
  • 1 stick
    celery diced
  • 1 md
    green or red bell pepper
  • 2 clove
    garlic minced
  • 2 sm
    jalapeno chili peppers, seeded and minced
  • 2 c
    butternut squash, peeled and diced
  • 1 lg
    potato chopped
  • 1 sm
    turnip, peeled and diced
  • 1 Tbsp
    parsley
  • 1 Tbsp
    thyme
  • 1 can
    drained red beans

    In large pot heat the oil over medium heat. Add diced onion. Add diced bell pepper. Add diced celery. Add minced garlic. Add minced jalapeno chili peppers (seeded. cook for about 5 mins.

    Add 8 cups water. Add diced up chicken breasts if you do not want it to be all vegetables. Add diced butternut squash. Add diced potato. Add diced turnip. Add the parsley and thyme. Bring to simmer over medium heat.

    Reduce heat to medium low and simmer for about 45 minutes. Then add one can drained beans and cook another five minutes. If you want to thicken it you can mash the squash and potatoes in the pot.
