green bean supper

This is an easy one! My husband loves green beans and bacon, so I make this for him at least 2 or 3 times a month!!! Fresh green beans are great but frozen ones work just as well and are quick. I've taken this to potluck suppers and always bring home an empty dish!!!

Ingredients
- 1/2 pound sliced bacon
- 2 pounds frozen or fresh green beans
- 1 - onion baseball sized
- 5 - red potatoes, medium size
- - about 4 or 5 cups water
- - salt & pepper to taste
How To Make green bean supper

Step 1Slice bacon into 1" pieces. Chop Onion. Put bacon in soup pot and slowly begin cooking it, when it starts to render fat, add onions. Stir and cook, not letting bacon to crisp or onions to carmelize.

Step 2While onions and bacon are cooking, scrub potatoes. Remove any eyes you don't like, and cut into chunks. Don't peel the potatoes.

Step 3Add about 2 cups water to bacon and onions...do not drain fat! Scrape bottom and sides of pot, so as to incorporate browned portions of bacon. Add potatoes and another 2 or three cups water, add beans. Cover and cook about 1 hr, 20 minutes or until liquid reduces enough to just cover beans and potatoes.

Step 4Serve in pasta or soup bowls with crusty bread to sop up juice.
