gimme clam fritters
This is a recipe from an area Church cookbook. It is typical of how we make our clam fritters. They are delightful and especially enjoyed more if you went clamming and brought home the clams! They are called 'Gimme' Clam Fritters because they are eagerly awaited for by family and friends who gather together for a summer meal! Many gather around the kitchen while we fry these ( about 3-4 minutes per side usually).

Ingredients
- 1 pint shucked clams
- 11/2 cups sifted enriched all-purpose flour
- 1/2 -3/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 cup juice, drained from clams
- 1 teaspoon baking powder
- 2 - large eggs, slightly beaten
- 1 tablespoon minced white onion, optional
How To Make gimme clam fritters

Step 1Drain clams and reserve 1/2 cup juice.

Step 2Coarsely chop clams.

Step 3Sift together flour, baking powder, salt and pepper in medium bowl.

Step 4Stir in chopped clams, clam juice and eggs. If using optional minced onion now is the time to add.

Step 5Heat some oil in a wide skillet so it is hot when you add fritters.

Step 6Drop fritter mixture by tablespoons in hot oil. Saute until lightly browned on both sides. Drain on paper towels. Chow down and enjoy!
