Ingredients

  • 1 - pound boneless chicken cut into bite-size pieces (thighs work well)
  • 1/2 - pound andouilee sausage
  • 1 - cup diced onion
  • 1/2 - cup celery, fine dice
  • 1/2 - cup diced green bell pepper
  • 1/2 - cup diced red bell pepper
  • 2 - cloves garlic, minced
  • 1 - 14-½ oz. can diced tomatoes
  • 1 1/2 - cups uncooked rice
  • 3 - cups chicken stock or canned broth
  • 2 - bay leaves
  • 1/2 - teaspoon cayenne
  • 1 - teaspoon salt
  • 1/2 - teaspoon black pepper
  • 1/2 - teaspoon white pepper
  • 1 - teaspoon dried thyme leaves
  • 1/4 - cup green onions including tops, chopped fine

  • Step 1
    In a heavy skillet or Dutch oven, saute the chicken and sausage in a small amount of vegetable oil.
  • Step 2
    Add the onion, celery, peppers and garlic. Continue sauteing until the vegetables are limp.
  • Step 3
    Add the remaining ingredients except the green onion, cover and simmer 45 minutes to an hour or until the rice is tender.
  • Step 4
    Stir in the green onions and simmer a few minutes more. Adjust seasonings and enjoy.
