14-½ oz. can diced tomatoes

cups uncooked rice

cups chicken stock or canned broth

teaspoon cayenne

teaspoon dried thyme leaves

cup green onions including tops, chopped fine

Step-by-Step

  • 1In a heavy skillet or Dutch oven, saute the chicken and sausage in a small amount of vegetable oil.
  • 2Add the onion, celery, peppers and garlic. Continue sauteing until the vegetables are limp.
  • 3Add the remaining ingredients except the green onion, cover and simmer 45 minutes to an hour or until the rice is tender.
  • 4Stir in the green onions and simmer a few minutes more. Adjust seasonings and enjoy.
