Ingredients
- 1 - pound boneless chicken cut into bite-size pieces (thighs work well)
- 1/2 - pound andouilee sausage
- 1 - cup diced onion
- 1/2 - cup celery, fine dice
- 1/2 - cup diced green bell pepper
- 1/2 - cup diced red bell pepper
- 2 - cloves garlic, minced
- 1 - 14-½ oz. can diced tomatoes
- 1 1/2 - cups uncooked rice
- 3 - cups chicken stock or canned broth
- 2 - bay leaves
- 1/2 - teaspoon cayenne
- 1 - teaspoon salt
- 1/2 - teaspoon black pepper
- 1/2 - teaspoon white pepper
- 1 - teaspoon dried thyme leaves
- 1/4 - cup green onions including tops, chopped fine

Step 1In a heavy skillet or Dutch oven, saute the chicken and sausage in a small amount of vegetable oil.

Step 2Add the onion, celery, peppers and garlic. Continue sauteing until the vegetables are limp.

Step 3Add the remaining ingredients except the green onion, cover and simmer 45 minutes to an hour or until the rice is tender.

Step 4Stir in the green onions and simmer a few minutes more. Adjust seasonings and enjoy.
