garbanzo pulao (pilaf)

I make this quick rice dish and serve it with a Yogurt dip when i do not have time to cook

Ingredients

  • 2 cups basmati rice
  • 1 can garbanzos juice drained and rinsed under cold running water
  • 1/2 - onion sliced
  • 1 teaspoon cumin seeds
  • 2 - serrano chiles , feel free to reduce or increase according to taste
  • 2 tablespoons canola oil
  • 1 - bay leaf
  • 1 stick cinnamon
  • 3 - cloves
  • 1 teaspoon ginger paste/ crushed
  • 1 teaspoon garlic paste/ crushed
  • 1 1/2 teaspoons salt or to taste
  • 3 1/2 cups water

How To Make garbanzo pulao (pilaf)

  • Step 1
    Wash and drain rice
  • Step 2
    Heat oil in a pot
  • Step 3
    Once oil is heated (not smoking)add the Cumin seeds,cinnamon, cloves and bay leaves.Saute till it sizzles a lil bit.
  • Step 4
    Add sliced onion and fry till light brown
  • Step 5
    Now add the ginger and garlic pastes with the serrano peppers
  • Step 6
    Once ontion is brown add the Garbanzo beans, fry for about 30 seconds
  • Step 7
    Add the drained rice and salt to the mix. Saute for about 1 minute
  • Step 8
    Add 31/2 cups of water and bring to boil
  • Step 9
    Once it comes to a boil reduce to low flame and cover till the rice is done. It will look nice and soft .
  • Step 10
    Serve by itself or with any chicken dish. I usually like to serve with a yougrt/ Cusomber Dip that we call Raita
