I always saute some mushrooms, scallops, or shrimp in olive oil and add to sauce. Grilled chicken would be very nice with this too.

Ingredients

  • 1 tablespoon whipped butter
  • 2 teaspoons margarine
  • 1 tablespoon plus 1/12 teaspoons all purpose flour
  • 1 cup 1% milk
  • 1 dash salt, white pepper, ground nutmeg, paprika
  • 1/2 cup part-skim ricotta cheese
  • 1 1/2 ounces parmesan cheese, grated
  • 1 3/4 cups cooked fettucini
  • 1 tablespoon fresh italian parsley, chopped

How To Make fettuccine alfredo weight watchers

  • Step 1
    In a 2 quart sauce pan, melt butter and margarine over low heat. Stir in flour and cook stirring constantly, for 1 minute. Gradually stir in milk and seasonings.
  • Step 2
    Continue to stir until mixture comes to a boil. Remove from heat.
  • Step 3
    Stir in cheeses and stir until ricotta is melted.
  • Step 4
    Meanwhile cook fettuccine to package directions, drain well.
  • Step 5
    Arrange fettuccine in a pasta bowl, and top with sauce and sprinkle parsley on top.
