- 1 tablespoon whipped butter
- 2 teaspoons margarine
- 1 tablespoon plus 1/12 teaspoons all purpose flour
- 1 cup 1% milk
- 1 dash salt, white pepper, ground nutmeg, paprika
- 1/2 cup part-skim ricotta cheese
- 1 1/2 ounces parmesan cheese, grated
- 1 3/4 cups cooked fettucini
- 1 tablespoon fresh italian parsley, chopped

Step 1In a 2 quart sauce pan, melt butter and margarine over low heat. Stir in flour and cook stirring constantly, for 1 minute. Gradually stir in milk and seasonings.

Step 2Continue to stir until mixture comes to a boil. Remove from heat.

Step 3Stir in cheeses and stir until ricotta is melted.

Step 4Meanwhile cook fettuccine to package directions, drain well.

Step 5Arrange fettuccine in a pasta bowl, and top with sauce and sprinkle parsley on top.
