Ingredients
- 2 medium eggplants
- 1 large onion, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pounds lean ground beef or lamb
- 2 - (8 oz) cans tomato sauce
How To Make eggplant casserole

Step 1Peel eggplant and cut into slices about 1/2-inch thick. soak in salted water for an hour . brown both sides of egg plant in a broiler

Step 2Brown onion and meat in a fry pan and season with salt and pepper. Alternate layers of the eggplant and meat mixture in a shallow casserole. Pour tomatoe sauce over top layer of ingrediance and add water to cover. Bake for 1 hour at 350degrees f. serve over rice
