Ingredients

  • 2 medium eggplants
  • 1 large onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 1/2 pounds lean ground beef or lamb
  • 2 - (8 oz) cans tomato sauce

How To Make eggplant casserole

  • Step 1
    Peel eggplant and cut into slices about 1/2-inch thick. soak in salted water for an hour . brown both sides of egg plant in a broiler
  • Step 2
    Brown onion and meat in a fry pan and season with salt and pepper. Alternate layers of the eggplant and meat mixture in a shallow casserole. Pour tomatoe sauce over top layer of ingrediance and add water to cover. Bake for 1 hour at 350degrees f. serve over rice
