easy white bean chili chicken
This recipe is a fan favorite of young and old alike! This is budget friendly, easy, and can feed a crowd. We make this white chili chicken and set out "toppings" for fresh bowls. Fave toppings are shredded cheddar, fresh cilantro, diced onion, jalapeños, sour cream, and diced tomatoes. I make mine more "dry," but it can be more like chili if you just add more broth. We serve this over white/brown rice and also tortillas. It is delicious!

- 2 - boneless, skinless breasts
- 2 cans white kidney beans
- 1 package white chili mix seasoning
- 1/2 jar pepperoncini peppers
- 1/2 cup pepperoncini pepper juice
How To Make easy white bean chili chicken

Step 1Cut breasts into halves or smaller uniform pieces.

Step 2Lay breasts in slow cooker (I prefer a casserole crock).

Step 3Sprinkle beans over chicken.

Step 4Sprinkle white chili seasoning over chicken/beans.

Step 5Scatter peppers over beans/chicken.

Step 6Pour pepper juice over.

Step 7Slow cook on low for 6-7 hours or until chicken cuts easily with a fork.
