easy "rat"atouille.. lol i thought the same thing
First time I heard of this dish I thought French poeole were "CRAZY",but I was wrong it wasnt what I thought it was at all. Was worth a good laugh on my part. I also have a friend who for the first few times I made this dish,she wanted to know where the "RAT" came in. LOL gotta love a friend you can laugh with.

Ingredients
- 1 medium eggplant, cut into bite size pieces
- 1 medium onion, cut into 1/2 inch thick slices
- 1 - red bell pepper, cut into 1/2 inch thick slices
- 1 - zucchini, cut into 1/2 inch thick slices
- 1/4 cup sun dried tomato dressing
- 1 can tomatoe, diced & undrained
- 2 tablespoons parmesan cheese, fat-free
- 1/2 cup shredded mozzarella cheese

Step 1Heat the oven to 350F.

Step 2Cook & stir the first 5 ingredients in a large fryinf pan over medium to high heat for 6 to 8 mins or until veggies are crisp & tender & lightly brown.

Step 3Add in the tomatoes & cook for abour 15 mins more. Make sure to stir occasionally. Spoon into a casseole dish & top with the grated topping & mozzarella.

Step 4Then bake for about 15 mins or until mozzarella is melted.
