easy "rat"atouille.. lol i thought the same thing

First time I heard of this dish I thought French poeole were "CRAZY",but I was wrong it wasnt what I thought it was at all. Was worth a good laugh on my part. I also have a friend who for the first few times I made this dish,she wanted to know where the "RAT" came in. LOL gotta love a friend you can laugh with.

Ingredients

  • 1 medium eggplant, cut into bite size pieces
  • 1 medium onion, cut into 1/2 inch thick slices
  • 1 - red bell pepper, cut into 1/2 inch thick slices
  • 1 - zucchini, cut into 1/2 inch thick slices
  • 1/4 cup sun dried tomato dressing
  • 1 can tomatoe, diced & undrained
  • 2 tablespoons parmesan cheese, fat-free
  • 1/2 cup shredded mozzarella cheese

How To Make easy "rat"atouille.. lol i thought the same thing

  • Step 1
    Heat the oven to 350F.
  • Step 2
    Cook & stir the first 5 ingredients in a large fryinf pan over medium to high heat for 6 to 8 mins or until veggies are crisp & tender & lightly brown.
  • Step 3
    Add in the tomatoes & cook for abour 15 mins more. Make sure to stir occasionally. Spoon into a casseole dish & top with the grated topping & mozzarella.
  • Step 4
    Then bake for about 15 mins or until mozzarella is melted.
