Easy "RAT"atouille.. LOL I thought the same thing

First time I heard of this dish I thought French poeole were "CRAZY",but I was wrong it wasnt what I thought it was at all. Was worth a good laugh on my part. I also have a friend who for the first few times I made this dish,she wanted to know where the "RAT" came in. LOL gotta love a friend you can laugh with.

1 medium
eggplant, cut into bite size pieces
1 medium
onion, cut into 1/2 inch thick slices
red bell pepper, cut into 1/2 inch thick slices
zucchini, cut into 1/2 inch thick slices
1/4 c
sun dried tomato dressing
1 can(s)
tomatoe, diced & undrained
2 Tbsp
parmesan cheese, fat-free
1/2 c
shredded mozzarella cheese


1Heat the oven to 350F.
2Cook & stir the first 5 ingredients in a large fryinf pan over medium to high heat for 6 to 8 mins or until veggies are crisp & tender & lightly brown.
3Add in the tomatoes & cook for abour 15 mins more. Make sure to stir occasionally. Spoon into a casseole dish & top with the grated topping & mozzarella.
4Then bake for about 15 mins or until mozzarella is melted.
