I make this for lunch 3 times a week, its healthy and doesn't need refrigeration. you can heat it up or eat it at room temp. also cheap;-)

Ingredients

  • 1 package firm organic tofu
  • 1 medium yellow onion
  • 1 bag frozen broccoli
  • 1 tablespoon red pepper flakes (optional)
  • 2 tablespoons olive oil, extra virgin
  • 1/2 bag frozen corn (optional)

How To Make easy,healthy tofu lunch or dinner

  • Step 1
    grill and sweat the onion in oil (chopped)
  • Step 2
    chop firm tofu in bite size squares add
  • Step 3
    add broccoli and corn and red pepper flakes also salt and pepper cover on simmer 10 minutes you're done
