Scraps Gourmet ( ala Bonnie) created another great one! Left over Sweet Potato,lump crab meat and orange peppers.... yum

Ingredients

  • 4 oz ounces lump crab meat
  • 1 large sweet potato
  • 2 - orange peppers
  • 6 pinches old bay seasoning
  • 2 teaspoons butter
  • 1 sprig italian flat leaf parsley

How To Make crab sweet potato stuffed orange peppers

  • Step 1
    Mix sweet potato ( cooled or left over, as I used) and 4 oz lumped crab meat or already made Wegmans Crab Cake into bowl. Mix Old bay, fined minced parsley into ingriedents.
  • Step 2
    Clean and cut off tops of orange peppers...
  • Step 3
    Fill peppers with mix and top with a pad of butter.. Prepare baking dish with peppers standing by cutting off bottom of pepper ( slightly) to stand and then wrapping each in tin foil and cover with foil. Bake in 350 degree preheaded oven for 45 minutes. SERVE!
