complete meal artichokes!

I have wonderful memories of learning this recipe many years ago from my husband's Italian family. I just serve with crusty bread and softened butter for a impressive meal!

Ingredients

  • 1 pound extra lean ground beef
  • 1 large egg
  • 1 cup freshly ground bread crumbs
  • 1 sprig chopped fresh rosemary
  • 1 sprig chopped fresh thyme
  • 1 teaspoon minced garlic
  • 1/2 teaspoon italian seasoning
  • - salt and pepper as desired
  • 3 large artichokes, washed and trimmed
  • 12 sticks mozzarella cheese
  • 1 tablespoon olive oil for cooking water

How To Make complete meal artichokes!

  • Step 1
    Mix first 8 ingredients well.
  • Step 2
    Open the artichokes widely in the middle around the heart area and stuff each with a third of the meat mixture.
  • Step 3
    Stuff 4 sticks of cheese around the sides of the meat.
  • Step 4
    Put the artichokes in a deep pot and add water, salt and olive oil. The water should come half way up the chokes. Cover and simmer at least 45 min. till meat is done and the chokes are tender. I also cook mine in my electric pressure cooker for 25 min. and they taste wonderful!
