The flavor is different from most bean recipes. My Aunt used to fix beans with cinnamon. I loved them. This is my version. Best if made day before and reheated.

Ingredients

  • 1/2 lb
    dried pink beans
  • 2 Tbsp
    olive oil
  • 1/2 c
    chopped onion
  • 1/3 c
    chopped green bell pepper
  • 1 tsp
    ground allspice
  • 2 tsp
    groud cumin
  • 2 Tbsp
    ground cinnamon
  • 8 oz
    tomato sauce
  • 1/2 tsp
    salt
  • 1 tsp
    fresh ground black pepper

How to Make Cinnamon Beans

Step-by-Step

  1. Soak beans overnight in enough water to cover
  2. Next day, drain beans
  3. Add fresh water to cover and simmer 1 hour.
  4. In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
