The flavor is different from most bean recipes. My Aunt used to fix beans with cinnamon. I loved them. This is my version. Best if made day before and reheated.

Ingredients
- 1/2 pound dried pink beans
- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1/3 cup chopped green bell pepper
- 1 teaspoon ground allspice
- 2 teaspoons groud cumin
- 2 tablespoons ground cinnamon
- 8 ounces tomato sauce
- 1/2 teaspoon salt
- 1 teaspoon fresh ground black pepper
How To Make cinnamon beans

Step 1Soak beans overnight in enough water to cover

Step 2Next day, drain beans

Step 3Add fresh water to cover and simmer 1 hour.

Step 4In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
