The flavor is different from most bean recipes. My Aunt used to fix beans with cinnamon. I loved them. This is my version. Best if made day before and reheated.

1/2 lb
dried pink beans
2 Tbsp
olive oil
1/2 c
chopped onion
1/3 c
chopped green bell pepper
1 tsp
ground allspice
2 tsp
groud cumin
2 Tbsp
ground cinnamon
8 oz
tomato sauce
1/2 tsp
1 tsp
fresh ground black pepper

How to Make Cinnamon Beans


  • 1Soak beans overnight in enough water to cover
  • 2Next day, drain beans
  • 3Add fresh water to cover and simmer 1 hour.
  • 4In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
