The flavor is different from most bean recipes. My Aunt used to fix beans with cinnamon. I loved them. This is my version. Best if made day before and reheated.

Ingredients

  • 1/2 pound dried pink beans
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1/3 cup chopped green bell pepper
  • 1 teaspoon ground allspice
  • 2 teaspoons groud cumin
  • 2 tablespoons ground cinnamon
  • 8 ounces tomato sauce
  • 1/2 teaspoon salt
  • 1 teaspoon fresh ground black pepper

How To Make cinnamon beans

  • Step 1
    Soak beans overnight in enough water to cover
  • Step 2
    Next day, drain beans
  • Step 3
    Add fresh water to cover and simmer 1 hour.
  • Step 4
    In skillet, saute in olive oil, onion, bell pepper, spices, salt and pepper. Add to beans. Cover with water to about 2" above beans. Stir well. Stirring occasionally,simmer 1 to 2 hours until beans are tender. (For "brothy" beans, add more water. Adjust salt.
