This recipe is from a cookbook I bought at a thrift shop called, Favorite Brand Name Vegetarian Cooking, its a great book even though my family is not traditionally vegetarians.with the meat prices the way they are now I could become one. the chili is really good.

Ingredients
- 2 tablespoons vegatable oil
- 1 medium onion,chopped
- 2 - celery ribs,diced
- 1 - carrot,diced
- 3 cloves garlic,minced
- 2 cans 15oz.great northern beans,rinsed and drained
- 1 1/2 cups water
- 1 cup frozen corn
- 1 can (6oz.) tomato paste
- 1 can (4oz.) diced mild green chilies,undrained
- tablespoon chili powder
- 2 teaspoons dried oregano leaves
- 1 teaspoon salt
How To Make chunky vegatable chili

Step 1Heat oil in large skillet over-medium high heat until hot.Add onion,celery,carrot and garlic;cook 5 minutes or until vegatables are tender, stirring occasionally.

Step 2Stir beans, 1 1/2 cups water, corn,tomato paste,chiles,chile powder,oregano and salt into skillet. Reduce heat to medium-low . Simmer 20 minutes,stirring occasionally.Garnish with cilantro,If desired.
