This recipe is from a cookbook I bought at a thrift shop called, Favorite Brand Name Vegetarian Cooking, its a great book even though my family is not traditionally vegetarians.with the meat prices the way they are now I could become one. the chili is really good.

    celery ribs,diced
  • 1

    15oz.great northern beans,rinsed and drained
  • 1 1/2 c
  • 1 c
    frozen corn
  • 1 can(s)
    (6oz.) tomato paste
  • 1 can(s)
    (4oz.) diced mild green chilies,undrained
  • Tbsp
    chili powder
  • 2 tsp
    dried oregano leaves
  • 1 tsp

How to Make Chunky Vegatable Chili


  1. Heat oil in large skillet over-medium high heat until hot.Add onion,celery,carrot and garlic;cook 5 minutes or until vegatables are tender, stirring occasionally.
  2. Stir beans, 1 1/2 cups water, corn,tomato paste,chiles,chile powder,oregano and salt into skillet. Reduce heat to medium-low . Simmer 20 minutes,stirring occasionally.Garnish with cilantro,If desired.
