Ingredients
- 1 cup olive oil
- 2 large yellow onion chopped
- 2 large green bell peppers chopped
- 2 large red bell peppers chopped
- 2 tablespoons chopped garlic
- 2 cups chili seasoning
- 2 cans black beans
- 2 cans chilli beans
- 2 cans kidney beans
- 2 cans tomato paste
- 1 can rotel tomatoes and chilis
- 1 teaspoon black pepper
- 4 cups water
- 1 teaspoon cayenne pepper
How To Make cheater vegetarian chilli

Step 1heat oil in soup pot on med heat. add chopped garlic.

Step 2while heating/garlic, wash and chop onion, red and green bell peppers into half inch squares. add to oil and garlic.

Step 3saute peppers on high heat until soft, onion will be opaque. (i like mine on the roasted, carmelized side so i cook them longer until onion is brown.)

Step 4turn heat down to low, add chili seasoning mix with peppers allow mixture to sit for about five minutes.

Step 5add all beans. mix. add rotel, mix.

Step 6add cayenne, black pepper. mix.

Step 7add tomato paste. mix.

Step 8add water, mix. cover and allow to simmer for four plus hours, stirring occasionally. add more water for desired consitancy.
