Ingredients

  • 1 cup olive oil
  • 2 large yellow onion chopped
  • 2 large green bell peppers chopped
  • 2 large red bell peppers chopped
  • 2 tablespoons chopped garlic
  • 2 cups chili seasoning
  • 2 cans black beans
  • 2 cans chilli beans
  • 2 cans kidney beans
  • 2 cans tomato paste
  • 1 can rotel tomatoes and chilis
  • 1 teaspoon black pepper
  • 4 cups water
  • 1 teaspoon cayenne pepper

How To Make cheater vegetarian chilli

  • Step 1
    heat oil in soup pot on med heat. add chopped garlic.
  • Step 2
    while heating/garlic, wash and chop onion, red and green bell peppers into half inch squares. add to oil and garlic.
  • Step 3
    saute peppers on high heat until soft, onion will be opaque. (i like mine on the roasted, carmelized side so i cook them longer until onion is brown.)
  • Step 4
    turn heat down to low, add chili seasoning mix with peppers allow mixture to sit for about five minutes.
  • Step 5
    add all beans. mix. add rotel, mix.
  • Step 6
    add cayenne, black pepper. mix.
  • Step 7
    add tomato paste. mix.
  • Step 8
    add water, mix. cover and allow to simmer for four plus hours, stirring occasionally. add more water for desired consitancy.
