How to Make cheater vegetarian chilli
- heat oil in soup pot on med heat. add chopped garlic.
- while heating/garlic, wash and chop onion, red and green bell peppers into half inch squares. add to oil and garlic.
- saute peppers on high heat until soft, onion will be opaque. (i like mine on the roasted, carmelized side so i cook them longer until onion is brown.)
- turn heat down to low, add chili seasoning mix with peppers allow mixture to sit for about five minutes.
- add all beans. mix. add rotel, mix.
- add cayenne, black pepper. mix.
- add tomato paste. mix.
- add water, mix. cover and allow to simmer for four plus hours, stirring occasionally. add more water for desired consitancy.
