olive oil
2 large
yellow onion chopped
2 large
green bell peppers chopped
2 large
red bell peppers chopped
2 Tbsp
chopped garlic
2 c
chili seasoning
2 can(s)
black beans
2 can(s)
chilli beans
2 can(s)
kidney beans
2 can(s)
tomato paste
1 can(s)
rotel tomatoes and chilis
1 tsp
black pepper
4 c
1 tsp
cayenne pepper


1heat oil in soup pot on med heat. add chopped garlic.
2while heating/garlic, wash and chop onion, red and green bell peppers into half inch squares. add to oil and garlic.
3saute peppers on high heat until soft, onion will be opaque. (i like mine on the roasted, carmelized side so i cook them longer until onion is brown.)
4turn heat down to low, add chili seasoning mix with peppers allow mixture to sit for about five minutes.
5add all beans. mix. add rotel, mix.
6add cayenne, black pepper. mix.
7add tomato paste. mix.
8add water, mix. cover and allow to simmer for four plus hours, stirring occasionally. add more water for desired consitancy.
