Ingredients For cauliflower shawarma

  • 1
    head cauliflower
  • 3 Tbsp
    olive oil
  • 1 tsp
    each ground coriander, cumin and paprika
  • salt and pepper
  • 1/2
    lemon
  • 1/2 c
    cilantro chopped
  • YOGURT SAUCE
  • 1/4 c
    tahini
  • 1/2 c
    yogurt plain full fat
  • 1 Tbsp
    lemon juice
  • 1 clove
    garlic minced
  • salt and pepper
  • romaine lettuce leaves for serving.

How To Make cauliflower shawarma

  • 1
    Preheat oven 400 degrees. Break the cauliflower into florets. Place the cauliflower in a bowl and add the oil, coriander, cumin, paprika and salt and pepper
  • 2
    Line a baking sheet with parchment paper. Lay the cauliflower in a single layer onto the paper. Roast for 30 minutes stiring to roast evenly.

    Meanwhile make the sauce by mixing all the ingredients together.

    When the cauliflower is done squeeze the 1/2 lemon over top and sprinkle with cilantro. Spoon into the lettuce leaves and top with sauce.
