This is very good,and meatless,but lots of nutrition.Very tasty.CROCKPOT.

Ingredients

  • 2 medium sweet potatoes[yams]about 1 pound,peeled and cut into 1 inch cubes
  • 2 cups frozen cut green beans
  • 1 can [15 ounce]black beans,rinsed and drained
  • 1 can vegetable broth [14 1/2 ounce size]
  • 1 small onion sliced
  • 2 teaspoons caribbean jerk seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon ground cinnamon
  • - salt & pepper to taste
  • 1/3 cup slivered almonds toasted
  • - hot pepper sauce [optional]

How To Make caribbean sweet potato and bean stew[crockpot]

  • Step 1
    Combine sweet potatoes,beans,broth,onions,jerk seasoning,,thyme salt and cinnamon .
  • Step 2
    Cover and cook on LOW HEAT about 5 hours,until veggies are tender.
  • Step 3
    Adjust seasonings;SPRINKLE WITH ALMONDS[toasted] TOAST ALMONDS:spread in a single layer in a heavy-bottomed skillet,cook over medium heat 1-2 minutes,stirring FREQUENTLY ,until the nuts are lightly browned.REMOVE FROM SKILLET IMMEDIATELY.COOL before using.

    Serve with hot sauce if desired
