caprese sandwich

I just love the combination of tomatoes, baby mozzarella, basil, and balsamic vinegar.... whether it be in a salad or on a pizza. I came up with this idea for a sandwich because I wanted something I could easily carry in my hands that wouldn't necessarily dirty up a plate. It's light, summery, and very refreshing. Enjoy!!

Ingredients
- 2 - thick slices of sour dough or artisian bread
- 1 - thickly sliced vine ripened tomato
- 2 - 3 slices baby mozzarella cheese
- - olive oil, and balsamic vineger drizzled lightly
- 2-3 - finely chopped basil leaves
How To Make caprese sandwich

Step 1On one slice of the bread, layer your tomatoes, top with the mozzarella cheese, drizzle with the olive oil and balsamic vinegar then sprinkle with the basil. Top with remaining slice of bread and serve.
