2Combine red and green peppers, tomato, green onions, poblano pepper, olive oil, lime juice and sour cream to sauce pan and simmer on low heat. Mix well. Add cooked rice and stir in. (I add salt, pepper, garlic powder, onion powder and dry dill weed for taste, otherwise these are pretty bland)
3To prepare roll-ups, warm tortillas in pan (or microwave). Sprinkle cheese on while still warm for it to slowly melt then add vegetable rice mixture. Roll tortilla up firmly and enjoy.
