This was my first time ever making black eyed peas. I love this recipe. This would taste good with a crusty loaf of French bread.

Ingredients
- 1 tablespoon olive oil
- 1 - onion, chopped
- 1 - green bell pepper, chopped
- 5 - stalks celery, chopped
- 5-6 cups chicken broth
- 1 cup brown rice
- 4 cans black eyed peas or 1 lb cooked & salted
- 1 can diced tomatoes and green chilies
- 1 can diced tomatoes
- 2-3 cloves garlic minced
- 1 pound slilced & browned turkey sausage, opt
How To Make black eyed pea gumbo

Step 1Cook the onion, pepper, and celery in olive oil until tender

Step 2Pour in the chicken broth & mix in rice, black-eyed peas, diced tomatoes & green chilies, diced tomatoes, & garlic.

Step 3Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender

Step 4Add water if soup is too thick
