This was my first time ever making black eyed peas. I love this recipe. This would taste good with a crusty loaf of French bread.

Ingredients

  • 1 tablespoon olive oil
  • 1 - onion, chopped
  • 1 - green bell pepper, chopped
  • 5 - stalks celery, chopped
  • 5-6 cups chicken broth
  • 1 cup brown rice
  • 4 cans black eyed peas or 1 lb cooked & salted
  • 1 can diced tomatoes and green chilies
  • 1 can diced tomatoes
  • 2-3 cloves garlic minced
  • 1 pound slilced & browned turkey sausage, opt

How To Make black eyed pea gumbo

  • Step 1
    Cook the onion, pepper, and celery in olive oil until tender
  • Step 2
    Pour in the chicken broth & mix in rice, black-eyed peas, diced tomatoes & green chilies, diced tomatoes, & garlic.
  • Step 3
    Bring to a boil, reduce heat to low, and simmer 45 minutes, or until rice is tender
  • Step 4
    Add water if soup is too thick
