black bean burgers

It is very hard to find good gluten free and especially grain and starch free meatless burger recipes! This one is baked, simple, frugal, and delicious. adapted from All You magazine

Ingredients

  • 2 tablespoons oil
  • 1 - celery stalk, chopped
  • 1 - onion, chopped
  • 1 clove garlic, minced
  • 1 can black beans, 15 oz, rinsed and drained
  • - (or 1 1/2 cup or less cooked black beans)
  • 1 large egg, lightly beaten
  • 1 tablespoon cumin
  • 1/2 cup almond meal
  • - salt and pepper

How To Make black bean burgers

  • Step 1
    Grease a large, rimmed baking sheet. Preheat oven to 375
  • Step 2
    Heat skillet over medium -high heat; add oil, celery and onion. Stir 5 minutes. Add garlic and saute 1 minute longer.
  • Step 3
    Pour beans into a bowl and mash into a thick paste. Add celery mixture, egg, cumin and almond meal. Season with salt and pepper. Form into smallish burger patties; place on baking sheet and bake until firm and set, about 10 minutes on EACH side - do NOT turn until burger are set on the bottom and firming.
