Being a busy mom who is also a full time student and home schools her daughter, I have found this is a delicious filling dinner! If you have the time, pork is also a good companion! I have friends that beg me to make this for them! It is so good!

Ingredients
- 16 ounces bag yellow rice
- 10 ounces can rotel diced tomatoes
- 15 1/4 ounces can black beans
- 4 tablespoons butter
How To Make black beans and yellow rice

Step 1In a large pot, bring 4 cups of water to a boil. Add 4 tablespoons butter, add rice and stir while boiling for 1 minute. Cover pot and reduce heat to simmer, cook 20-25 minutes. Once rice is finished, add Rotel tomatoes and (drained) black beans. Let simmer for 15-20 minutes and top with chopped onions (if desired).
