  • 4 large
    portobello mushrooms
  • 4 Tbsp
    olive oil
  • 2 clove
    garlic
  • 3 Tbsp
    fresh basil
  • 2 tsp
    herbs de provence (link in comments below)
  • 2 medium
    slicing tomatoes, ripe but firm
  • 4 slice
    mozzarella or swiss cheese
  • ·
    salt & pepper to taste
  • BALSAMIC SHALLOT MARINADE

  • 2 medium
    shallots
  • 1 Tbsp
    black pepper
  • 1-1/2 tsp
    kosher salt
  • 1 Tbsp
    fresh basil or parsley
  • 1/2 c
    balsamic vinegar
  • 1 c
    olive oil

How to Make 'BELLO OF THE BALL (SALLYE)

Step-by-Step

  1. BALSAMIC SHALLOT MARINADE PREPARATION:

    Finely mince shallots and basil (or parsley)

    Whisk vinegar and olive oil together until melded

    Add salt and pepper

    Add minced shallots and basil

    Continue whisking until ingredients are well blended

    Set aside
  2. MUSHROOM PREPARATION:

    Preheat oven to 400º F

    Preheat grill or large heavy (cast iron is best) skillet to medium high heat

    Line baking sheet with parchment paper & set aside

    Finely mince peeled garlic cloves and basil

    Transfer to shallow mixing bowl

    Add olive oil, herbs de provence, salt and pepper to bowl and whisk until well blended

    Set aside
  3. Stem the mushrooms and wipe mushroom caps clean with peper towel

    Brush oil/herb mixture generously over both sides of mushroom caps

    Grill the mushrooms for 6-8 minutes per side

    Remove from heat and place on lined baking sheet
  4. Slice tomatoes into 1/4" thick slices

    Place 2 or 3 slices of tomato on each mushroom

    Cover tomatoes with a slice of cheese

    Place baking sheet in preheated oven and cook until cheese is melted and bubbly
  5. Remove to serving plates and drizzle marinade over each entire mushroom (be generous)

    Best served immediately while still hot
  6. These can also be served on toasted buns as "hamburgers" for vegetarian diners

    Just garnish them like regular burgers.
