baked tomato bolognese!

I've been on a Cooking/Baking Frenzy for a while now & came up with 2 recipes that turned out SUPERB! I had friends/family (8-10) judge the two and gave RAVES about both (and believe me they're VERY HONEST with their opinons). This is the 1st recipe I came up with that won everyone's votes so I thought I'd post it. I KNOW you'll enjoy this recipe! Look for my Ham & Navy Bean SUPER SOUP!!

Ingredients

  • 3 large tomatoes
  • 8 slices bacon of choice
  • 6 small baby carrots
  • 1 stalk celery ribs
  • 1 medium onion
  • 1/2 cup rice of choice
  • 3/4 cup asparagus (or green veg. of choice)
  • 1 cup mexican blend shredded cheese
  • 1/2 can bolognese sauce

How To Make baked tomato bolognese!

  • Step 1
    Preheat Oven @350 Slice Tomato Tops off (Save for Topping) at the end.
  • Step 2
    Gently & Carefully Remove insides without piercing outer shell & Save (for my next Ham & Navy Bean Super Soup!)
  • Step 3
    Fry Bacon Strips until done but NOT CRISPY. Put aside to cool
  • Step 4
    Finely Dice Carrots/Celery/Onion into tiny cubes ( gently fry till soft.
  • Step 5
    Green Veg. of Choice must be fully cooked as well as rice
  • Step 6
    Pour sauce on bottom of pan & layer vegs on top.
