bacon and veggie quiche

i'm tryin to eat healthier and get more veggies in me...came up with this....

Ingredients

  • 2 large pie shells
  • 1 pound thick cut bacon
  • 12 large eggs
  • 1 tablespoon jarred garlic
  • 2/3 cup low fat evaporated milk
  • 11/2 cups ex sharp cheddar cheese
  • 1 medium onion
  • 1 small red pepper
  • 8 ounces sliced fresh mushrooms
  • 1 small carrot
  • 1 package [10 oz] fresh spinach
  • 1/2 cup parmesan cheese

How To Make bacon and veggie quiche

  • Step 1
    have pie crust ready[make yur own,unroll, whatever u want....i used frozen already made]
  • Step 2
    cut bacon into small pieces and fry til crisp...drain on paper towel....while bacon cooks...slice onion as thin as u can,chop red pepper into small pieces,grate carrot with small grater...once bacon is done ...add veggies to pan cook til tender [make sure ya add the sliced mushrooms too].... when veggies are done add bacon back into pan stir well

    while vegges are cookin,break eggs into lg bowl whisk well add milk whisk again add garlic stir in
  • Step 4
    now divide veggies in 1/6 pour 1/3 into bottom of each pie shell....now divide cheese in 1/6 put 1/3 on each pie now 1/3 veggie and 1/3 cheese in each than again [3 layers] now whisk egg mix well divide in 1/2 both 1/2 in each pie
  • Step 5
    have oven preheated to 350... bake both quiches for 35-40 min check for doneness with butter knife place near center if it comes out clean quiche is done when it comes out of oven sprinkle 1/2 the parm cheese on each...can serve hot,room temp or cold....freezes well for another meal too...this is great with fresh fruit salad and ice tea!!!
