I was shocked when I looked up the nutritional facts of my go to taco salad that I had been eating for years...who knew??? So I decided to use my new found knowledge and re-make it into my very first Yummy Low Points Food.

1/2 cbeans, refried, low-fat

1 ozcheddar cheese, shredded

3 ozground turkey, lean
-
1tortilla shell, flour - no lard, low carb
-
2 Tbspolive oil, extra virgin, divided

2 clettuce, iceburg, shredded

1/2 csalsa, chunky
-
1 tspsour cream, fat-free
-
green onion, chopped for garnish
-
2black olives, sliced
-
1/4 conion, brown, diced
-
1/4 ctomato, romane, diced

taco seasoning mix - just a pinch :)

1 tspgarlic, fresh, minced

salt and pepper to taste

garlic powder with parsley - just a pinch
How To Make yes you can eat the bowl taco salad

1In order to keep this low point/cal. You truly must measure all the ingredients. In a pan over medium heat. Add 2tbls of olive oil, garlic and the diced brown onion. Cook until onions are tendar. Stir frequently.

2Once the onions have cooked down, add the raw ground turkey. Season with taco season,garlic powder, salt & pepper to taste. Cook until brown. Drain and set aside.

3Rub the flour tortilla with 2tbls of olive oil. Ensure you cover the entire shell booth sides. Select a small oven safe bowl. Place the bowl on a cookie sheet and drape the tortilla over the bowl. Bake the tortilla at 350F for approx. 10-12mins. Note: cooking time varies so keep an eye on it. You want the tortilla to be brown and crisp.

4Heat the refried beans in the microwave.

5Assembly - there is no right or wrong way to assemble your taco salad. However, this is how I assemble mine. In the center of your crip taco shell: Add: the refried beans - spread it around as if you are making a sandwhich; next is the ground turkey, then the shredded lettuce; cover the lettuce with your salsa; next sprinkle the cheese and diced tomato; place the sour cream right on top. Place the sliced olives on top of the sour cream. Last with the green onions...there you have it.. A very yummy taco salad that you can actually eat the bowl and not feel guilty about it :)
