We are trying to eat healthy so I decided to try making enchilada's that would be both healthy and delicious. I husband really loves it.

Ingredients

  • 1 large onion
  • 2 medium yellow squash
  • 2 medium zucchini
  • 1 medium butternut squash
  • 1 medium green bell pepper
  • 1 medium yellow bell pepper
  • 1 tablespoon olive oil
  • 6 - corn tortillas
  • 2 cans red enchilada sauce
  • 2 cups monterey jack cheese

How To Make vegetable enchilada's

  • Step 1
    Preheat oven to 350 Spray 11x13 pan with non-stick cooking spray.
  • Step 2
    Peel and chop Butternut squash, chop all your vegetables. In a large skillet heat oil and add vegetables, drizzle with additional olive oil stir to coat. Cover and cook until tender.
  • Step 3
    Place a layer of vegetable mixture in bottom of pan, cover with 3 tortilla's, repeat layers. Pour enchilada sauce over top and sprinkle with cheese. Cook for 30 minutes or until bubbly.
