We are trying to eat healthy so I decided to try making enchilada's that would be both healthy and delicious. I husband really loves it.

Ingredients
- 1 large onion
- 2 medium yellow squash
- 2 medium zucchini
- 1 medium butternut squash
- 1 medium green bell pepper
- 1 medium yellow bell pepper
- 1 tablespoon olive oil
- 6 - corn tortillas
- 2 cans red enchilada sauce
- 2 cups monterey jack cheese
How To Make vegetable enchilada's

Step 1Preheat oven to 350 Spray 11x13 pan with non-stick cooking spray.

Step 2Peel and chop Butternut squash, chop all your vegetables. In a large skillet heat oil and add vegetables, drizzle with additional olive oil stir to coat. Cover and cook until tender.

Step 3Place a layer of vegetable mixture in bottom of pan, cover with 3 tortilla's, repeat layers. Pour enchilada sauce over top and sprinkle with cheese. Cook for 30 minutes or until bubbly.
