My hubby and I are trying vegan options for better health...I made up this recipe and it was soooo good. a little messy but yummy !! Next time I may wrap like a burrito instead.

Add to Grocery List

1 Tbsp
olive oil, extra virgin
red pepper
8 oz
baby portabellas sliced
1 medium
sweet onion
1 small
1 sm can
chopped green chilis
1/2 tsp
cumin (can add more as desired)
salt and pepper to taste
1 can
vegan refried beans ( i like the spicy ones)
vegan friendly tortillas (most are)
sliced avocado
salsa of choice
cilantro, fresh (optional)

How to Make Vegan Tacos


  • 1slice up pepper and onions thinly , use a lg saute/fry pan ....heat olive oil on med and add onions and peppers. cube zuccini and add saute for 5 minutes then add mushrooms, seasoning and a can of chopped chiles. Cook to desired tenderness(use water not more oil to keep the veggies from sticking to the pan) then add Cilantro (optional).
  • 2Heat beans in a pan or microwave for 2 minutes in a bowl.
  • 3Warm tortillas, spread a spoonful of beans on then add veggies...serve with salsa and sliced avacado.....Yumm !!
