1slice up pepper and onions thinly , use a lg saute/fry pan ....heat olive oil on med and add onions and peppers. cube zuccini and add saute for 5 minutes then add mushrooms, seasoning and a can of chopped chiles. Cook to desired tenderness(use water not more oil to keep the veggies from sticking to the pan) then add Cilantro (optional).
2Heat beans in a pan or microwave for 2 minutes in a bowl.
3Warm tortillas, spread a spoonful of beans on then add veggies...serve with salsa and sliced avacado.....Yumm !!
