Vegan Tacos

Ingredients

1 Tbspolive oil, extra virgin
-
1red pepper
-
8 ozbaby portabellas sliced
-
1 mediumsweet onion
-
1 smallzuccini
-
1 sm canchopped green chilis
-
1/2 tspcumin (can add more as desired)
-
·salt and pepper to taste
-
1 canvegan refried beans ( i like the spicy ones)
-
·vegan friendly tortillas (most are)
-
1sliced avocado
-
·salsa of choice
-
handfulcilantro, fresh (optional)
How to Make Vegan Tacos
- slice up pepper and onions thinly , use a lg saute/fry pan ....heat olive oil on med and add onions and peppers. cube zuccini and add saute for 5 minutes then add mushrooms, seasoning and a can of chopped chiles. Cook to desired tenderness(use water not more oil to keep the veggies from sticking to the pan) then add Cilantro (optional).
- Heat beans in a pan or microwave for 2 minutes in a bowl.
- Warm tortillas, spread a spoonful of beans on then add veggies...serve with salsa and sliced avacado.....Yumm !!
