vegan tacos

My hubby and I are trying vegan options for better health...I made up this recipe and it was soooo good. a little messy but yummy !! Next time I may wrap like a burrito instead.

Ingredients

  • 1 tablespoon olive oil, extra virgin
  • 1 - red pepper
  • 8 ounces baby portabellas sliced
  • 1 medium sweet onion
  • 1 small - zuccini
  • 1 sm can - chopped green chilis
  • 1/2 teaspoon cumin (can add more as desired)
  • - salt and pepper to taste
  • 1 can - vegan refried beans ( i like the spicy ones)
  • - vegan friendly tortillas (most are)
  • 1 - sliced avocado
  • - salsa of choice
  • handful - cilantro, fresh (optional)

How To Make vegan tacos

  • Step 1
    slice up pepper and onions thinly , use a lg saute/fry pan ....heat olive oil on med and add onions and peppers. cube zuccini and add saute for 5 minutes then add mushrooms, seasoning and a can of chopped chiles. Cook to desired tenderness(use water not more oil to keep the veggies from sticking to the pan) then add Cilantro (optional).
  • Step 2
    Heat beans in a pan or microwave for 2 minutes in a bowl.
  • Step 3
    Warm tortillas, spread a spoonful of beans on then add veggies...serve with salsa and sliced avacado.....Yumm !!
