Needed to throw together something quick after I'd looked at the clock and thought...shoot it's almost dinner time and I haven't started! Everyone enjoyed this dish.

garlic clove finely chopped
1/2 c
chopped onion
1 c
chopped tomato (can always use canned if you need to)
1/2 c
chopped green onion
1/2 tsp
chili powder
2 tsp
8oz. can tomato sauce
16oz. can black beans-rinsed and drained
little bit of chopped cilantro
corn tortillas-soften in microwave in damp paper towel
1 c
shredded cheese-i use low fat

How to Make Tortilla and Black Bean Bake


  • 1Heat oven to 350. Spray a large skillet with cooking spray. Add garlic, onion, tomato, green onion, chili powder and cumin. Cook until onions are tender over medium heat.
  • 2Add tomato sauce and cook for about 5 mins. Stir in beans and cilantro, salt and pepper to taste.
  • 3Spray a 9" casserole dish with cooking spray. Layer 4 tortillas, 1/3 of cheese, 1/3 bean mixture. Repeat 2 more times. Top with a little cheese.
  • 4Bake covered for 20 mins., then uncovered for 10 mins. I've also added ground beef to the dish, but origially I hadn't any meat thawed out and it was delicious with out it!
