Needed to throw together something quick after I'd looked at the clock and thought...shoot it's almost dinner time and I haven't started! Everyone enjoyed this dish.

    garlic clove finely chopped
  • 1/2 c
    chopped onion
  • 1 c
    chopped tomato (can always use canned if you need to)
  • 1/2 c
    chopped green onion
  • 1/2 tsp
    chili powder

    8oz. can tomato sauce
  • 1
    16oz. can black beans-rinsed and drained
  • ·
    little bit of chopped cilantro
  • 12
    corn tortillas-soften in microwave in damp paper towel
  • 1 c
    shredded cheese-i use low fat

How to Make Tortilla and Black Bean Bake


  1. Heat oven to 350. Spray a large skillet with cooking spray. Add garlic, onion, tomato, green onion, chili powder and cumin. Cook until onions are tender over medium heat.
  2. Add tomato sauce and cook for about 5 mins. Stir in beans and cilantro, salt and pepper to taste.
  3. Spray a 9" casserole dish with cooking spray. Layer 4 tortillas, 1/3 of cheese, 1/3 bean mixture. Repeat 2 more times. Top with a little cheese.
  4. Bake covered for 20 mins., then uncovered for 10 mins. I've also added ground beef to the dish, but origially I hadn't any meat thawed out and it was delicious with out it!
