I have been baking this dish around 30 years. Wow that is a long time. It is one of those quick , never fail recipes. The family loves it and everyone I have served this to does also.

- 1 pkg
- taco seasoning mix
- 2 Tbsp
- picante sauce
- 1 can(s)
- nibblets brand corn
- 2 c
- cheddar cheese, shredded
- 1 pkg
- corn muffin mix (such as jiffy or betty crocker
1Brown the hamburger in a skillet and drain off the fat. Add the taco mix, picante and mix throughly , add the water called for on the taco mix. Add the corn and mix well.
2Spray a casserole dish or iron skillet with Pam. Add the meat mixture. Layer the 2 cups of cheese on top.
3Mix up corn muffin mix according to package directions. Spread evenly over the top of cheese. Bake according to package directions for the muffin mix at 400F for 20 to 25 min. Stick in a tooth pick to make sure corn bread is done at the end of the baking time.
