I can't remember where I found this recipe but it works great for phase 1 of the South Beach diet. I have to double the recipe of I want leftovers because my family loves this dish! If I'm lucky, I get to freeze some too.

Ingredients
- 1 can refried beans
- 1 pound extra lean ground beef
- 1 large onion, chopped
- 1 large bell pepper, chopped
- 8 ounces mushrooms, sliced or chopped
- 2 cloves garlic, finely chopped
- 4 ounces can green chilis
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 teaspoon garlic powder
- 3 tablespoons tomato paste
- 2/3 cup f/f or low fat cheese (i use cheddar)
How To Make taco bake

Step 1Preheat oven to 450. Spray a 7x11 or 9x9 casserole dish with cooking spray and spread refried beans on the bottom. Season with salt and pepper and bake for 15 minutes.

Step 2Meanwhile, saute meat, onions, & bell pepper (seasoned with salt & pepper) until onion begins to soften and meat begins to brown. Add garlic and mushrooms and cook until mushrooms have released their water and meat is thoroughly browned. Drain meat mixture and return to pan. Add all spices and cook for 2-3 minutes until spices are heated. Add green chilies and tomato paste. The mixture should be moist but not runny (add a little water if needed).

Step 3Pour meat mixture on top of the refried beans and top with the cheese. Bake for 10 minutes or until the cheese is melted.

Step 4NOTE: This is wonderful served on top of a bed of mixed lettuce. Garnish suggestions are: green onions, black olives, f/f or low fat sour cream, cilantro, salsa, etc.
