Ingredients

  • 1 package frozen sweet corn (14-16 ounces)
  • 1 tablespoon cooking oil
  • 1 large white onion, chopped fine
  • 2 tablespoons chili powder
  • 2 cups tomato juice (or tomato puree)
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • pinch salt & pepper to taste
  • pinch ground cumin
  • 1 small can pikled sliced jalapenos, drained

How To Make tex-mex corn (sallye)

  • Step 1
    Preheat oven to 350º butter 9x13 baking dish and set aside
  • Step 2
    In heavy skillet, saute onion in cooking oil over medium high heat until golden yellow
  • Step 3
    In large mixing bowl, combine corn and all other ingredients, including sauteed onions. Mix well
  • Step 4
    Transfer mixture to buttered baking dish Bake at 350º for 30-45 minutes
