Ingredients

1 pkg
frozen sweet corn (14-16 ounces)
1 Tbsp
cooking oil
1 large
white onion, chopped fine
2 Tbsp
chili powder
2 c
tomato juice (or tomato puree)
2 Tbsp
butter
1 tsp
garlic powder
pinch
salt & pepper to taste
pinch
ground cumin
1 small
can pikled sliced jalapenos, drained

Step-By-Step

1Preheat oven to 350º

butter 9x13 baking dish and set aside
2In heavy skillet, saute onion in cooking oil over medium high heat until golden yellow
3In large mixing bowl, combine corn and all other ingredients, including sauteed onions.

Mix well
4Transfer mixture to buttered baking dish

Bake at 350º for 30-45 minutes
