Ingredients
- 2 cups brown rice, cooked
- 1 can black beans, drained and rinsed
- 1 can corn, drained and rinsed
- 1 can rotel (with juice)
- 2 teaspoons dried diced onion
- 1/2 teaspoon chili powder (cayenne would be good too)
- 1/4 cup italian dressing, fat-free
- - salt and pepper to taste
How To Make chilled rice & corn salad

Step 1Mix together all ingredients.

Step 2Refrigerate for at least 1 hour.

Step 3Serve over shredded lettuce and topped with light sour cream if desired.
