chilled rice & corn salad

I wanted to create a new, healthy side dish for Mexican night. This one was a winner!

Ingredients

  • 2 cups brown rice, cooked
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 can rotel (with juice)
  • 2 teaspoons dried diced onion
  • 1/2 teaspoon chili powder (cayenne would be good too)
  • 1/4 cup italian dressing, fat-free
  • - salt and pepper to taste

How To Make chilled rice & corn salad

  • Step 1
    Mix together all ingredients.
  • Step 2
    Refrigerate for at least 1 hour.
  • Step 3
    Serve over shredded lettuce and topped with light sour cream if desired.
