This is a favorite of mine, and it's a low guilt treat.

Ingredients

  • - **corn tortillas
  • - **roasted tomatoes
  • - **fresh cilantro
  • - **fresh sliced onion
  • - **mexican cheese (asadero)
  • - **thai garlic paste

How To Make reduced carb open face quesadilla

  • Step 1
    Pan or oven roast tomatoes.
  • Step 2
    Place one corn tortilla in hot skillet and spread Thai sauce on.
  • Step 3
    Then add cheese, roasted tomatoes, onion and allow tortilla to get good and hot and cheese melt.
  • Step 4
    Top with fresh cilantro and enjoy. You can also add some sauteed portabello slices, it's just delicious!!!
