Call it whatever you want, the name isn't what makes this dish great. The blending of flavors makes it unique and delish! Its savory veggies, creamy sauce and yummy cheese will have everyone begging for seconds.

Ingredients

  • 1 medium yellow squash, cubed
  • 1 medium chayote squash, cubed
  • 3 cloves garlic, minced
  • 1/2 medium red bell pepper
  • 1/2 medium green bell pepper
  • 1/2 small red onion
  • 4 teaspoons olive oil
  • 1 package veggie elbow pasta (12 oz)
  • 1 medium roma tomatoe
  • 2 cups shredded mozzarella, reduced fat
  • 3 cups spaghetti sauce, meatless
  • 1/2 cup philadelphia cooking creme, santa fe blend

  • Step 1
    Heat Oven to 375 and spray inside of a 13 x 9 glass pan. Bring water to boil and cook pasta, drain when done and set aside.
  • Step 2
    While pasta is cooking sautee Chayote and Yellow squash for 4-5 min over medium heat. Add onion and peppers and continue to sautee for 3 minutes. Add garlic and continue to sautee for 1 minute.
  • Step 3
    Add squash mixture to large bowl and add cooked pasta. Mix. Add spaghetti sauce and stir. Add 1 cup of cheese and cooking creme and mix again.
  • Step 4
    Spread mixture in pan and bake for 10 minutes. Remove from oven.
  • Step 5
    Top with remaining cheese and continue baking for an additional 8-10 minutes.
  • Step 6
    Serve with red pepper flakes or Parmesan cheese.
