i like to make these in the springtime when my family and i can eat outside. makes a pleasently different kind of lunchtime treat.

Ingredients
- 2 1/2 cups monterey jack cheese (melted)
- 1 jar marinated artichoke hearts, drained and chopped
- 1 can slice ripe black olives, drained
- 2/3 cup picante sauce
- 1/2 cup toasted almonds, chopped
- 1/4 cup loosely packed cilantro, chopped
- 8 - 8 inch flour tortillas
- 3 tablespoons butter (melted)
How To Make oven fried quesadillas

Step 1preheat oven to 350

Step 2combine cheese, artichoke hearts, olives, picante sauce and almonds in a large bowl

Step 3brush one side of 4 tortillas with butter and place butter side down on baking sheet

Step 4place one cup of cheese mixture on each tortilla and spread within 3/4 inch of edge; top with remaining tortillas, pressing firmly

Step 5brush top of tortillas with butter

Step 6bake at 350 about ten min or until tops are lightly browned

Step 7remove from oven and let stand 3 to 5 min

Step 8cut each quesadilla into 8 wedges

Step 9serve with additional picante and lime wedges
