oven fried quesadillas

i like to make these in the springtime when my family and i can eat outside. makes a pleasently different kind of lunchtime treat.

Ingredients

  • 2 1/2 cups monterey jack cheese (melted)
  • 1 jar marinated artichoke hearts, drained and chopped
  • 1 can slice ripe black olives, drained
  • 2/3 cup picante sauce
  • 1/2 cup toasted almonds, chopped
  • 1/4 cup loosely packed cilantro, chopped
  • 8 - 8 inch flour tortillas
  • 3 tablespoons butter (melted)

How To Make oven fried quesadillas

  • Step 1
    preheat oven to 350
  • Step 2
    combine cheese, artichoke hearts, olives, picante sauce and almonds in a large bowl
  • Step 3
    brush one side of 4 tortillas with butter and place butter side down on baking sheet
  • Step 4
    place one cup of cheese mixture on each tortilla and spread within 3/4 inch of edge; top with remaining tortillas, pressing firmly
  • Step 5
    brush top of tortillas with butter
  • Step 6
    bake at 350 about ten min or until tops are lightly browned
  • Step 7
    remove from oven and let stand 3 to 5 min
  • Step 8
    cut each quesadilla into 8 wedges
  • Step 9
    serve with additional picante and lime wedges
