i like to make these in the springtime when my family and i can eat outside. makes a pleasently different kind of lunchtime treat.

  • 2 1/2 c
    monterey jack cheese (melted)
  • 1 jar(s)
    marinated artichoke hearts, drained and chopped
  • 1 can(s)
    slice ripe black olives, drained
  • 2/3 c
    picante sauce
  • 1/2 c
    toasted almonds, chopped
  • 1/4 c
    loosely packed cilantro, chopped
  • 8
    8 inch flour tortillas
  • 3 Tbsp
    butter (melted)

How to Make oven fried quesadillas


  1. preheat oven to 350
  2. combine cheese, artichoke hearts, olives, picante sauce and almonds in a large bowl
  3. brush one side of 4 tortillas with butter and place butter side down on baking sheet
  4. place one cup of cheese mixture on each tortilla and spread within 3/4 inch of edge; top with remaining tortillas, pressing firmly
  5. brush top of tortillas with butter
  6. bake at 350 about ten min or until tops are lightly browned
  7. remove from oven and let stand 3 to 5 min
  8. cut each quesadilla into 8 wedges
  9. serve with additional picante and lime wedges
