We love fajitas and easy dinner recipes, so this fajita recipe was a win-win for us. All you need to do is cut up the chicken and veggies, then pop them in the oven. The outcome is juicy and tender chicken and a dinner that's packed with flavor. The seasoning and salsa add a wonderful robust flavor. Serve with tortillas, over rice or quinoa and you have a delicious and healthy dinner.

Ingredients For oven fajita bake

  • 3 lg
    boneless, skinless chicken breasts, cut into thin strips
  • 2 Tbsp
    vegetable oil
  • 2 pkg
    McCormick Fajita Seasoning
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    seasoning salt
  • 1 can
    diced tomatoes with green chilies (Rotel), 10 oz.
  • 1 lg
    onion, sliced
  • 1 lg
    red bell pepper, cut into strips
  • 1 lg
    green bell pepper, cut into strips

How To Make oven fajita bake

  • Chicken strips in a baking dish.

    Preheat the oven to 400 degrees. Place chicken strips in a greased 13×9 baking dish.
  • Chicken coated with seasoning.

    In a small bowl combine the oil, fajita seasoning, garlic powder, and salt. Drizzle the spice mixture over the chicken and stir to coat.
  • Tomatoes, peppers, and onions added to the baking dish.

    Next add the tomatoes, peppers, and onions to the dish. Stir to combine.
  • Chicken ready to bake.

    Bake uncovered for 20-25 minutes or until chicken is cooked through and the vegetables are tender. Serve on warmed flour tortillas. Top with guacamole and sour cream.
