I'm a truck driver, with my husband.As we travel this beautiful country we have wonderful opportunity to try any kind of food possible and we learn much from talking to people. Napol, prickly pear cactus, is rumoured to lower colesterol. I found, at wal-mart as well as many other places,a pickeld, ina glass jar, version of Napoli. It makes the most wonderful dishes. I can cook it on the truck. This is versatile recipe. I love recipes I can play with. The one I'm sharing is my favorite version so far. Mix in love no matter what your version. Chow Mae (Shelby)

Ingredients
- 1 jar bottle napolitos - prickly pear cactus
- 1 package chicken strips- boneless
- 1 can fire roasted with garlic tomatoes
- 2 cans diced chili, onion,tomatoes
- 1-4 clove fresh garlic, depends on your taste. (optional)
- 1 can black beans, canned
- 1 can butter beans
- 1 can navy beans
- 1 can chili beans
- 1 can pinto beans
- 1 cup brown rice
How To Make napolitos -prickly pear cactus goulash

Step 1Pour about 1-2 tablespoons of olive oil in your pan or crock pot. Of you choose to put fresh garlic and onions put them in! Put choice of meat in and brown it all up.

Step 2While sauteing open all jars and cans. The Prickly Pear cactus is pickeled so I put it in a colander and wash it real quick to chase away the vinegar.

Step 3Dump it all in the pan or crock pot. Cook until hot enough and enjoy.

Step 4Brown rice I always give just a tad more water. In this case half a cup of brown rice 1 cup plus 2 tablespoons of water to cook it. Sometimes you can cook rice in a soup broth too. Yum
