nachos (easy, delicious and quick)

If you like Mexican food, but don't have time to do alot of prep. this is a recipe for you. My kids and thier friends all love this dish, as well as my daughter's fiance. So, it's a great meal, expecially tasty and fast!

Ingredients

  • 2 pounds lean ground beef
  • 3 - jars (16 oz) of salsa
  • 3 - cans ( 14.4 oz ) black beans
  • 3 - cans ( 14.4 oz ) whole kernel corn
  • - mexican hot sauce (optional)
  • 1 - head of separated, cleaned, dried and shredded lettuce leaves
  • 16 ounces sour cream (optional)
  • 16 ounces guacamole (your favorite)(optional)
  • 2 - family sized bags of mission tortilla chips
  • 2 pounds cheese ( i use 1 pound of monterey jack and 1 pound of mild cheddar, because i usually have those on hand)
  • - (you may want to just buy the fiesta mix and get all the best mexican cheeses)

How To Make nachos (easy, delicious and quick)

  • Step 1
    Brown the ground beef until cooked through. Drain fat. Add jars of salsa, drained black beans and drained corn. Stir well and heat up 'till good and hot.
  • Step 2
    Place a handful of tortilla chips on the plate. Sprinkle a layer of shredded lettuce, followed by a liberal portion of cheese over the top. Add a generous ladle full of above mixture, and perhaps some hot sauce (optional). Follow with another generous sprinkling of cheese.
  • Step 3
    Top with a dollop of sour cream and guacamole. Great served with ice cold Limeade.
