I think you will enjoy this vegetarian tortilla as much as I do. Sometimes I get tired of meat and just want something else. I add black olives sometimes also. This is a good healthy type lunch or light dinner with a small salad. Enjoy!!!!!!!!!!!!!!!!!!!!!!!!

    taco seasoning
  • 1 pkg
    large flour tortillas

How to Make Mexican Vegetarian Tortilla For One

Step-by-Step

  1. In a large skillet with a small amout of olive or canola oil over medium heat cook veggies until they are all tender. About 10 minutes. Season veggies with taco seasoning. Fill tortilla, roll up carefully and enjoy.
