shredded cheese, quantity and type to taste (i used cheddar)
refried beans
salsa

How to Make Mexican Scrambled Eggs

Step-by-Step

  • 1In a frying pan, heat some oil. Roll the tortillas up, and cut with scissors into strips directly into the pan. Fry until crispy, then remove from pan.
  • 2Add a little more oil, if necessary, and fry all the vegetables until tender.
  • 3Mix the eggs with salt and pepper and add to pan along with some of the shredded cheese. When the eggs have been cooking a little bit, add the tortilla strips to the pan and continue cooking until the eggs are just at the consistency you like them.
  • 4Serve with additional shredded cheese, refried beans, and salsa.
