This is an easy recipe that my whole family loves. You can use red or green enchilada sauce and corn or flour tortillas. It usually depends on what I have on hand. Since I grew my own green chiles and canned a green chile enchilada sauce, I use the green. Mix and match all you want, it's all good !

Ingredients

  • 2 pounds ground beef
  • 1 small onion,diced
  • 1 - bell pepper,diced
  • 2 packages taco seasonings
  • 4 cups shredded mexican cheese
  • 1 package corn or flour tortillas
  • 2 pints enchilada sauce, red or green
  • 1 1/2 cups water

How To Make mexican lasagna, millie's

  • Step 1
    In large skillet add ground beef, diced onion and diced bell pepper and cook till meat is done.
  • Step 2
    Drain fat off and return to skillet. Add water and both packs of taco seasonings. Bring to boil then reduce heat and simmer till liquid is nearly gone.
  • Step 3
    Spray a 9x13 baking dish and starting with some sauce,layer tortillas,sauce, meat then cheese.
  • Step 4
    Repeat layers two or three more times and end with cheese on top.
  • Step 5
    Bake at 350 degrees for 30-35 minutes. Let set for at least 5 minutes before serving.
