This is an easy recipe that my whole family loves. You can use red or green enchilada sauce and corn or flour tortillas. It usually depends on what I have on hand. Since I grew my own green chiles and canned a green chile enchilada sauce, I use the green. Mix and match all you want, it's all good !

Ingredients
- 2 pounds ground beef
- 1 small onion,diced
- 1 - bell pepper,diced
- 2 packages taco seasonings
- 4 cups shredded mexican cheese
- 1 package corn or flour tortillas
- 2 pints enchilada sauce, red or green
- 1 1/2 cups water

Step 1In large skillet add ground beef, diced onion and diced bell pepper and cook till meat is done.

Step 2Drain fat off and return to skillet. Add water and both packs of taco seasonings. Bring to boil then reduce heat and simmer till liquid is nearly gone.

Step 3Spray a 9x13 baking dish and starting with some sauce,layer tortillas,sauce, meat then cheese.

Step 4Repeat layers two or three more times and end with cheese on top.

Step 5Bake at 350 degrees for 30-35 minutes. Let set for at least 5 minutes before serving.
