I'm always looking for a quick, low-fat breakfast since I go to school early in the morning. I came up w/ this because it's quick and yummy and the beans give you protein, while the salsa wakes the senses! Can be doubled or tripled!

- 3 - egg whites
- 1/2 - cup canned black beans, drained.
- 1 ounce reduced-fat, shredded cheddar cheese.
- 2 tablespoons spicy salsa.
How To Make low-fat mexican egg scramble

Step 1Spray a skillet w/ cooking spray, place pan over med-high heat. Add egg whites, scramble lightly. Add beans and cheese, scramble until eggs are set. Top w/ salsa.
