Low-fat Mexican egg scramble
I came up w/ this because it's quick and yummy and the beans give you protein, while the salsa wakes the senses!
Can be doubled or tripled!
- egg whites
- cup canned black beans, drained.
- 1 oz
- reduced-fat, shredded cheddar cheese.
- 2 Tbsp
- spicy salsa.
How to Make Low-fat Mexican egg scramble
- 1Spray a skillet w/ cooking spray, place pan over med-high heat. Add egg whites, scramble lightly. Add beans and cheese, scramble until eggs are set. Top w/ salsa.
