low carb mexican bake
This recipe on has 18g of carbs. I used my chicken taco recipe to cook the chicken. I served this in a bowl with a little sour cream (2g of carbs). You could also eat it with a wheat tortilla (40g of carbs).

- 2-4 - chicken breast filets
- 1 can diced tomatoes
- 1 can black beans
- - enough cheese to cover
How To Make low carb mexican bake

Step 1Cook chicken like you would do for tacos or burritos. I have a recipe on this site under "Chicken Tacos."

Step 2Drain all of the liquids from the cans and layer in a Pyrex dish in this order: Beans, tomatoes and chicken.

Step 3Cook covered on 400 degrees for 30 minutes.

Step 4Uncover and continue to cook until for 15 more minutes.

Step 5Add cheese let it sit until it melts.
