How to Make Low Carb Mexican Bake
- Cook chicken like you would do for tacos or burritos. I have a recipe on this site under "Chicken Tacos."
- Drain all of the liquids from the cans and layer in a Pyrex dish in this order: Beans, tomatoes and chicken.
- Cook covered on 400 degrees for 30 minutes.
- Uncover and continue to cook until for 15 more minutes.
- Add cheese let it sit until it melts.
